What Is Anaerobic Coffee Processing?

If you've ever picked up a bag of specialty coffee and noticed something on the label that said "anaerobic" — and then quietly wondered what that meant — you're not alone.
It's one of those terms that shows up in the specialty coffee world without much explanation. Once you understand what it is, those coffees start to make a lot more sense. The flavors become less surprising and more inevitable.
Here's the short version: anaerobic processing is a fermentation method. Sealed tanks, no oxygen, controlled pressure. The result is a cup that's often winey, fruit-forward, and complex in ways that can feel unlike any coffee you've had before.
The longer version is worth knowing.
It Starts with Fermentation
All coffee goes through some kind of fermentation before it reaches your cup. Even the most traditional washed coffees ferment — usually in open tanks or on the skin of the coffee cherry — as part of breaking down the sugars and mucilage around the bean.
Anaerobic processing takes that fermentation and puts it under control.
The cherries (or depulped beans, depending on the specific method) are placed into sealed, airtight tanks. Oxygen is displaced or evacuated. As the natural yeasts and bacteria get to work, CO₂ builds up inside the tank — creating a pressurized, oxygen-free environment.
That word, "anaerobic," just means without oxygen. It's the same principle used in winemaking, which is actually where the technique was borrowed from.Â
What the Absence of Oxygen Actually Does
In an open fermentation environment, many different microorganisms are competing. The process is a little wild, a little unpredictable, and heavily influenced by ambient temperature, humidity, and airflow.
Seal the tank and remove the oxygen, and you change everything. Aerobic bacteria — the kind that thrive in open air — can no longer survive. What takes over are anaerobic organisms, primarily lactic acid bacteria. These produce different acids, different compounds, and different flavor precursors than open-air fermentation.
The result is typically more intense. More fruit. More complexity. Often a winey quality — hibiscus, berry, tropical notes — that can be startling if you're expecting a more classic coffee profile.
It also gives producers a higher degree of control. The sealed environment limits variables. Temperature can be regulated. Fermentation time can be precisely monitored. It's demanding — mistakes can ruin a batch — but when it works, it works beautifully.
Anaerobic vs. Washed vs. Natural
It helps to understand where anaerobic fits alongside the other processing methods.
Washed coffee has the cherry skin and mucilage removed before drying. The flavors tend to be cleaner, brighter, and more origin-driven — you taste the terroir clearly, without the influence of the fruit. Our La Morena from Guatemala and Warmikuna from Peru are both washed coffees — that balance and clarity is exactly what makes them such reliable daily drinkers.
Natural (dry) process coffee is dried whole, inside the cherry, on patios or raised beds. The bean absorbs sugars and fruit flavors from the surrounding pulp over weeks. The result is rich, round, and fruit-forward — but in a wilder, less controlled way than anaerobic.
Anaerobic is different because it's primarily a fermentation method, not a drying method. It can actually be combined with other processes — you can have an anaerobic washed coffee, an anaerobic natural, or an anaerobic honey. The sealed fermentation stage happens before drying, and what happens in that tank shapes the flavor foundation of the finished cup.
What Anaerobic Coffee Tastes Like
This depends on the specific method, the producer, the variety, and how long fermentation runs — but there are common threads.
Expect fruit. Often vivid, sometimes tropical, occasionally winey. Anaerobic coffees frequently have a kind of density to them — layers that reveal themselves as the cup cools. There's often a silky mouthfeel, and an intensity in the finish that lingers longer than you might expect.
That said, a well-executed anaerobic coffee doesn't taste like a novelty. It tastes like itself — the origin is still there, the terroir still comes through, the processing just gives it a specific kind of depth.

We've been drawn to anaerobic coffees for a few years now because the producers we work with are doing extraordinary things with the method.
Our La Bastilla Anaerobic comes from La Bastilla Coffee Estates in Jinotega, Nicaragua — a Rainforest Alliance–certified farm that's been refining its anaerobic lots with impressive precision. Fermented in sealed tanks to highlight fruit and chocolate tones, it cups with notes of chocolate, berry, and black tea. Roasted light, it's surprisingly versatile — as good over ice as it is through a pour-over.
Our Montano Jaguar from Tarrazú, Costa Rica uses an anaerobic honey process — meaning the depulped beans (with mucilage intact) are fermented anaerobically before being laid out to dry. The combination produces something genuinely cozy: cinnamon spice, hibiscus, raspberry, and a honeyed depth that makes it one of the most approachable complex coffees we've roasted. It's what you want on a cold New England morning.
