What Makes a Coffee "Washed"?



That little word on your coffee bag actually matters more than you'd think. If you've spotted "washed" alongside the origin and variety information and wondered what it means for what's in your cup, here's the honest answer: quite a bit.

Processing is one of the biggest flavor variables in coffee. Washed processing has a specific effect that, once you know what to look for, you'll start tasting everywhere.

How It Works

When a coffee cherry is harvested, the bean you'll eventually brew is buried inside layers of fruit: skin, a sticky layer called mucilage, and a thin parchment coating the seed itself. All of that has to come off before the coffee can be dried and roasted. The way a producer removes it is called processing, and that decision shapes everything that follows.

In washed processing, the skin comes off within hours of harvest. The beans are then fermented β€” in water tanks or open-air, depending on the producer and the climate β€” until the mucilage breaks down, washed clean, and laid out to dry. By the time they hit the drying beds, there's no fruit left. Just the bean. And that's exactly the point.

Why It Tastes the Way It Does

Because the fruit has been stripped away, you're not tasting the cherry. You're tasting the bean, which means you're tasting the place it came from. Washed coffees tend to be bright and clear, with crisp acidity and flavors that feel distinct rather than blended together. If you've ever had a coffee where you could pick out a specific note and it was just... there, clean and precise, it was probably washed.

High-altitude regions with strong terroir, like Ethiopia's floral Yirgacheffes or Guatemala's citrusy coffees from Antigua, are often processed this way because the method lets that character come through without the fruit getting in the way. You're not adding anything. You're removing everything that might distract from the bean itself.

It's also worth saying that washed processing, done well, produces really consistent coffee. Removing the fruit early limits the variables a producer has to manage, and that precision shows up in the cup.

The Skill Behind It

Simple as it sounds, washed processing isn't easy to get right. The fermentation stage is where things can go sideways. Too short and there's residual mucilage left on the bean, which creates off-flavors. Too long and the fermentation turns aggressive and sour. Getting it right means reading the environment: temperature, humidity, altitude, and water quality. What works at one farm won't necessarily work at another.

It's also one reason washed processing tends to be more common in wetter, high-altitude regions where clean water is plentiful. In drier areas with limited water access, other methods like natural processing developed partly out of necessity. The farms that do washed processing well have spent years learning how.

What to Try

Our La Morena from Guatemala and Warmikuna from Peru are both good examples of this method at its best. La Morena is stone fruit and bright acidity, clean through to the finish. Warmikuna is a little quieter β€” more cocoa and gentle caramel sweetness β€” the kind of cup that rewards you the longer you sit with it. Both are worth grabbing if you want to taste what washed processing actually does.
