Where the Peñas Blancas Java leaned into wild fruit and ferment, Wilder Garcia's washed Geisha is about restraint and clarity. Grown at 1800 meters in Cajamarca, Peru, this microlot is processed with same-day depulping and a 48-hour hermetic fermentation, then moved to solar dryers. Notes of blackberry, honey, and tea rose, with hints of coconut and strawberry, and the kind of structure that shifts and opens as the cup cools.
