What Makes a Coffee “Natural”?

We teased it at the end of the washed processing post: natural processing takes the completely opposite approach. The fruit stays on through drying. Here’s what that means for your cup.

Natural processing is the oldest coffee processing method. No depulping. No water tanks. The whole coffee cherry is laid out to dry in the sun. Over weeks, the bean absorbs the sugars and fruit compounds of the surrounding pulp. The result is something rich, fruit-forward, and one of the most expressive cups in specialty coffee.

The Oldest Method There Is

This predates every other processing method. Before depulping machines and wet mills existed, farmers in Ethiopia and Yemen simply dried their coffee in the sun with the whole cherries on open ground. That’s still the foundation of what’s happening today.

Natural processing remains the dominant method in regions where water is scarce or infrastructure is limited. But it’s also a choice that producers with access to every other option actively make, because when it’s executed well, natural processing produces flavors that nothing else replicates.

How It Works

After harvest, cherries are sorted, often by floating them to remove defects and unripe fruit, then spread out on raised drying beds or open patios. Whole. Skin on. Pulp on. Everything intact.

They stay there for three to six weeks. Workers turn the cherries regularly, sometimes multiple times a day, to prevent mold, ensure even drying, and stop over-fermentation from taking hold. It’s labor-intensive, and it’s weather-dependent from start to finish.

As the cherry dries and shrivels around the bean, the bean slowly absorbs sugars, fruit acids, and flavor compounds from the surrounding pulp. That absorption is the whole point. Once the cherries reach the right moisture level, the dried outer layers are hulled off and the green bean goes to export.

Why It Tastes the Way It Does

Natural coffees tend to be fuller-bodied, sweeter, and deeply fruit-forward. Blueberry, strawberry, stone fruit, tropical notes, sometimes a wine-like quality that’s round and rich rather than sharp. Perceived acidity is lower than a comparable washed coffee, and the sweetness tends to be upfront.

That said, naturals can be polarizing. At their best, they’re some of the most expressive cups in specialty coffee. At their worst, if the drying wasn’t managed carefully, they can taste overripe or muddy. The line between complex and compromised is thinner here than with washed or anaerobic processing.

Ethiopia is the benchmark for naturals: the Yirgacheffe and Harrar regions produce lots with blueberry and floral notes that have defined what this method can be. Brazil processes enormous volumes naturally: heavier body, chocolate and nut, less floral intensity. Yemen has been doing it this way for centuries and that character is distinct from anywhere else.

The Skill Behind It

Natural processing looks simple. It isn’t.

Three to six weeks of daily management, in open air, at the mercy of the weather. One stretch of unexpected humidity or rain can compromise an entire lot. The farms that do it well have spent years learning how their specific microclimate behaves: altitude, airflow, and seasonal patterns. That knowledge is hard-earned and it shows in the cup.

It comes from the Peñas Blancas processing center, a collaborative hub led by Nestor Lasso and Jhoan Vergara, two producers whose work brings together farmers, agronomists, and quality specialists around shared infrastructure and a serious commitment to craft. The Java varietal, with lineage tracing back to Ethiopia and Costa Rica, is an expressive one to begin with. Processed naturally and roasted light, it cups with notes of red fruit punch, star fruit, and tropical tang. Bright, winey, and genuinely fruit-driven.

Not every lot makes it to the Apex Reserve. This one earned it. Stock is limited.
